The short verdict: the Nesco VS-12 Deluxe is one of the most complete countertop vacuum sealers in the mid-range price tier. It gives you the settings that usually cost more (moist and dry modes, an optional double seal, a gentle pressure setting, pulse control, roll storage and a cutter) in a machine that takes any brand of bag. It is not built for marathon sessions or liquids, and the warranty is only a year.
This Nesco VS-12 Deluxe vacuum sealer review is based on Nesco's care and use guide, its product page and retail listings, not hands-on testing. We explain every setting, what the manual says about using it well, where it falls short, and which alternative to buy if it does not fit.
Who the Nesco VS-12 is for
Buy it if you seal meat, cheese, produce and leftovers a few times a week, want custom bag sizes from a roll, and like having manual control for soft foods and sous vide.
Skip it if you process whole animals or seal 40 bags in a sitting (look at fan-cooled or chamber machines), you want to seal soups without freezing them first (get a chamber sealer), or you want the longest warranty (FoodSaver and Weston offer longer terms on some models).

The settings, explained
The VS-12 has more buttons than most sealers in its tier, and each one solves a real problem.
Seal time: Dry, Moist and Double
Nesco's care guide describes two seal-time settings. Dry uses a shorter heat time for dry food. Moist uses a longer heat time for damp food or wet bags, because moisture on the seal area takes more heat to fuse. Nesco's product page also lists an optional Double seal, which lays down two seal lines. Use it for freezer bags, bone-in cuts and anything going into a long sous vide bath.
Pressure: Normal or Gentle
Normal is full vacuum for most food. Gentle uses less vacuum pressure for soft or delicate items such as bread, berries or fish. Normal is the default.
Pulse Vacuum and Manual Seal
Pulse Vacuum runs the pump only while you hold the button, so you can stop at exactly the vacuum you want. Then press Manual Seal to finish. Manual Seal also works mid-cycle: press it during an automatic Vac and Seal cycle and the pump stops and the sealer heats right away. Nesco's guide recommends watching delicate food and pressing Manual Seal as soon as it reaches the vacuum you want. This is the most useful control on the machine for juicy proteins and sous vide.
Canister and Marinate
Plug the included hose into the hose port to vacuum Nesco canisters, universal lids, bottle savers or jar attachments (all sold separately). The Marinate function vacuums a canister in stages to work marinade into food faster.
Strengths
- The right controls for soft and wet food. Moist, Gentle, Pulse and a mid-cycle Manual Seal are rare in one mid-range machine. Together they let you seal a marinated chicken thigh or a loaf of bread without a mess.
- Roll storage and a cutter. You can make a bag the exact length of what you are sealing, which saves money over pre-cut bags. Two rolls in two widths come in the box.
- Any brand of bags. Nesco says the VS-12 works with any brand of vacuum sealer bags, so you can shop on price.
- Double seal option. Two seal lines give you a margin on freezer bags and long sous vide cooks.
- Accessory port. One machine handles bags, canisters and, with an attachment, mason jars.
Weaknesses
- Light duty cycle. The care guide says the VS-12 is not designed for continuous use and approves one operating cycle every two minutes. Manual Seal will not work within 15 seconds of the last activation, and if the machine overheats it shuts off and needs 15 minutes to cool.
- Not a liquids machine. Like every external sealer, it pulls air through the bag opening. Nesco's guide warns that hot liquids bubble over and must be cooled first. Soups and sauces need freezing before sealing.
- 1-year warranty. Shorter than the 2 years Anova and Weston list for comparable machines and the 5-year terms many FoodSaver listings show.
- Bag width. The 11.8 in. maximum covers most cuts, but not a full brisket or a whole salmon.
- Commercial use excluded. Nesco's safeguards say the appliance is not intended for commercial use.
Getting the best results from the VS-12
Nesco's care and use guide includes practical advice that applies to most sealers:
- Leave about 3 in. of empty bag at the open end, and add 3 in. when you cut a bag from the roll.
- Smooth the open end. Wrinkles and ripples cause leaks.
- Place the bag in front of the black tabs inside the vacuum chamber, and do not cover the air intake.
- Partially freeze meat before sealing, freeze fruit, and blanch vegetables.
- Cool hot liquids before sealing.
- Cushion sharp points such as fish bones and shells so they do not pierce the bag.
- Wipe the vacuum chamber after each use, and let the machine rest about 2 minutes between bags.
For a step-by-step walkthrough, see how to use a vacuum sealer.
Care and maintenance
- Store with the handle unlocked. Nesco says to keep the handle in the unlocked position when not in use so the foam gaskets do not compress or deform. Deformed gaskets are the most common cause of weak vacuum.
- Clean gently. Unplug, wipe with a damp sponge, never immerse, and avoid abrasive cleaners.
- Replace worn parts. The rubber sealing strip and foam gaskets should be replaced if they are distorted or broken.
- Check for leaks. If a bag loses vacuum, Nesco suggests sealing it with some air inside, submerging it in water and pressing: bubbles show the leak.
- Reuse bags carefully. Nesco says bags can be washed and reused, but bags that held greasy foods should not be.
Food safety note
Nesco's own guide says vacuum packing extends the shelf life of foods but does not preserve them, and that perishable foods belong in the refrigerator or freezer. That matches Clemson Cooperative Extension (HGIC 3865), which warns that Clostridium botulinum can grow in moist, low-acid foods in low-oxygen packages at room temperature. Keep sealed perishables at 40 °F or below, or frozen at 0 °F, where USDA FSIS says food stays safe indefinitely and storage times affect quality only.

Avid Armor USV20: Best Chamber Alternative
If liquids are the problem, no external sealer will fix it. The USV20 chamber sealer has an 11.5 in. seal bar, pouches up to 11 x 10 in., timed vacuum from 15 to 60 seconds and a dry pump, at about 17.5 lb. Our chamber vs external vacuum sealer guide explains when the jump is worth it.

How we reviewed it
We did not test the Nesco VS-12. We read Nesco's care and use guide and product page in full, checked current retail listings, and compared its published specs and features with the alternatives' manufacturer pages and manuals. Where Nesco's own figures look like packaging measurements, we say so.
FAQ
Is the Nesco VS-12 a good vacuum sealer?
Yes, for households that seal a few bags at a time. It has Dry and Moist settings, an optional double seal, Gentle pressure, pulse vacuum, roll storage and a cutter. Its limits are a 1-year warranty and a duty cycle of one operating cycle every two minutes.
Can the Nesco VS-12 seal liquids?
Not true liquids. It handles moist food with the Moist setting, and its vacuum chamber catches small spills. Nesco's guide says hot liquids must be cooled first because they bubble over. Freeze soups and sauces flat before sealing.
What bags work with the Nesco VS-12?
Nesco says it is compatible with any brand of vacuum sealer bags, meaning embossed or channeled external-sealer bags and rolls up to 11.8 in. wide. Smooth chamber pouches will not work. The roll compartment holds one roll up to 11 in.
How long should the Nesco VS-12 rest between bags?
Nesco's care guide approves one operating cycle every two minutes and says the Manual Seal button will not work within 15 seconds of the last activation. If it overheats, it shuts off; let it cool for 15 minutes.
What is the difference between the Nesco VS-12 and VS-09?
Both take bags up to 11.8 in. wide and have pulse and seal-only functions plus a canister hose. The VS-12 adds a stronger 130 W pump rated at 25.1 inHg, Dry, Moist and Double seal settings, Gentle pressure, roll storage and a cutter. The VS-09 lists 110 W and ships with pre-cut bags.
Verdict
The Nesco VS-12 Deluxe is an easy recommendation for everyday home sealing: the controls are smarter than its price tier suggests, it takes any brand of bag, and roll storage keeps running costs down. Respect its two-minute rhythm, freeze liquids first, and it will cover most kitchens. If you need longer sessions, a longer warranty or liquid sealing, the Weston Pro-2300, Anova Pro or Avid Armor USV20 fill those gaps. See where it ranks overall in our best vacuum sealers guide.
